A blend of Cabernet Sauvignon from our Uplands vineyard and Merlot from Oliver, this wine balances dark fruit, cassis, and firm tannins with plum, cherry, and soft acidity. Each variety was fermented and aged separately in neutral French oak for 36 months before blending. Unfiltered to preserve its depth, it offers black cherry, plum, tobacco, eucalyptus, and spice, with notes of cassis, dark fruit, and mocha on the palate.
This wine pairs beautifully with tomahawk steak with Gorgonzola butter, loaded veggie burger, eggplant curry, cornish game hen, aged Gouda, and aged cheddar.
