This wine is a heavy bodied blend of ripe Cabernet Sauvignon bursting with ripe plum, blackberry and dried thyme, and the bright notes of lemon peel, leather, and blueberry of the Syrah. Aged partially in stainless steel and 100% French Oak (15% new, the rest 2-4 years old).
Vineyard Notes
Region: West Bench Osoyoos, Okanagan Valley
Soil Type: Stony Loamy Silt
Age of Vines: 10-12 Years
Production Notes
Fruit for this wine was picked over 7 days from our Osoyoos vineyard. Both the Cabernet Sauvignon and Syrah were hand harvested, destemmed and cold macerated for 21 days. The batches were then inoculated with yeast sourced from the Rhone and Bordeaux, France. Fermentation at 26-28 C allows for maximum fruit and tannin expression. Once the sugar was completely consumed, the wine batches were pressed slowly in a basket press and then aged in 100% French barrel for one year (2-4 year old barrels). The resulting batches were blended for the flavor to make this rich and fruity wine.
Winemaker Notes
This wine is a bold and voluptuous pairing of two delicious wines, made to enjoy in the cooler months of fall and winter.
Food Pairing Notes
Because of the boldness of this wine, it is best enjoyed with the richest savoury fall and winter dishes of roast meats, rich hunter stews or ratatouille vegetables.
