PAIR WITH OUR PINOT NOIR OR WONERDERFULLY DRY ROSE!
3 tbsp Brown Sugar
3 Tbsp Bourbon
2 Tbsp light Soy Sauce
1 Tbsp grated Ginger
1 Tbsp fresh lime juice
3 Garlic cloves, minced
1/4 tsp ground black pepper
4 salmon fillets
134 thinly sliced green onions
1 tblsp sesame seeds
Combine brown sugar, bourbon, soy sauce, ginger, lime juice, garlic and pepper. Place salmon fillets in mixture amd marinade in fridge for one hour, turning regularly.
Grill skin side down on medium hot grill for 4-5mins each side, depending on thickness.
Pour reserve marinade into saucepan, stir over medium heat and reduce.
After removing salmon from grill, brush sauce on each fillet and sprinkle with green onions and sesame seeds.
Words can not describe how exciting this time of year is for us! We picked our first grapes on August 20th - 2015 is currently (and exceptionally) 3 weeks ahead of schedule, and since then there has been constant activity at Bench 1775 Winery.
Bench 1775 grapes are hand-harvested, each cluster cut carefully off the vine, and the grapes are returned to the winery.
Once they are delivered to the winery, the grapes go immediately into the crusher de-stemmer, which removes the grape berries from the stems and gently crushes the grapes, producing the juice that will one day be a Bench 1775 wine!
We have outdoor yoga classes throughout the summer! Our winery is the perfect venue to explore outdoor yoga. With 3 class offerings a week, there is sure to be something to fit your schedule. Every Wednesday and Friday from 9am - 10am. Every Thursday from 7:30pm - 8:30pm. These gently invigorating classes are open to anyone wanting to improve their wellness by exploring the mind/body/spirit connection through Hatha Yoga. Throughout the summer we will visit such principles as mindfulness, self care, breath work, meditation, gratitude & more. No experience is required and all ages, shapes & fitness levels are welcome. It's been a winning season at Bench 1775! We have won many DOUBLE GOLD and GOLD medals from highly respected competitions, such as All Canadian Wine Championships, Los Angeles International Wine Competition, Northwest Wine Summit, and Pacific Rim Wine Competition, since this May. We are exremely pleased with the results and owe these amazing awards to our very talented winemaking team! The most awarded white wines are our 2014 Bench 1775 Sauvignon Blanc, 2014 Bench 1775 Gewürztraminer, 2014 Bench 1775 Chill (White Blend), and 2014 Bench 1775 Pinot Gris. Also, our excellent red wines received numerous awards and high scores from wine judges and wine enthusiasts. Our 2013 Bench 1775 Merlot was scored 90 POINTS from John Schreiner and got SILVER medal at the 2015 All Canadian Wine Championships and 2015 Northwest Wine Summit.

On August 8th, we will have host a charitable event, Frist Annual Loving Hands Summer Gala, which will gather donations for the Arusha Scholarship Fund. The community will come together to support the future of students in Arusha Tanzania, through a beautiful evening of entertainment, local talent showcases, delicious wine, and good company.
All proceeds from this event will go to the Arusha Scholarship Fund, a project created by a group of passionate students who want children in Arusha, Tanzania to have the opportunities to education they deserve. Christian is the first student we are sponsoring, and with the help of the community we can make many more academic dreams a reality.

July 16th, we were hosting free live music with Kevin Kane of the Grapes of Wrath and Brian Potvin of the Northern Pikes, visitors and fans enjoyed fabulous music, good wines and an amazing view!
From the mid-80s to the early-90s, The Grapes Of Wrath and The Northern Pikes produced some of the catchiest and most heart-felt singles and videos to come out of Canada at that time. This pairing presented a special treat for fans of Canadian rock, as Bryan Potvin of The Northern Pikes and Kevin Kane of The Grapes Of Wrath teamed up to perform their solo material and favorites from both bands, both individually and as a duo. As well as old favourites from their respective back catalogs, Bryan drew heavily from his just-released debut solo album, Heartbledwhite, while Kevin performed several of the songs from last year's Grapes comeback, High Road, and slipped in a song or two from his next solo project.
Great news for dessert wine lovers! Now we are offering the Sweet Wine Club Choice which includes our portfolio icewines and late harvest wines. Our icewines are produced from grapes ripened in the summer sun and left on the vine to freeze naturally in the frigid Canadian winter. The frozen grapes are painstakingly harvested by hand at temperatures reaching - 8º C for an extended period. This concentrates the flavour and sugar yielding what many regard as the ultimate sweet wine. Pressed while still frozen, the grapes release only 5 - 10% of their normal juice leaving the water content behind in the form of frozen crystals. After a slow and skillful fermentation process the wines are ready for bottling. The intense varietal flavors and brilliant complexity of a finely balanced Icewine offers an unparalleled experience.
