Our grapes are allowed to ripen fully in the heat of the hot desert summer and then left to naturally freeze on the vines until temperatures drop below -8C. Often there is only a day or so to hand pick and press the frozen grapes, which are then skillfully vinted to produce our award winning Icewines.
